- I ran a heap of errands today and I think I managed to get almost everything we wanted or needed to get. PHEW.
- Rain! It’s cool and clammy and dreary outside but it is most definitely RAIN and not snow or sleet or hail. RAIN!
- Five trays of banana slices are currently in the dehydrator. They’re darker than I’d like (not enough pineapple juice, I guess) but I’m hopeful!
- Getting some laundry done, some dishes washed and a bathroom cleaned.
- This is the first day of March Break (for the kids), a week off (for Coffee) and a bunch of free days with only a bit of school (for me). Yay!

You have to go with lemon juice for the banana slices, not pineapple, and really soak them in it.
Better yet, go to the vitamin store, and get pure ascorbic acid (vitamin C), in either crystal, or preferably powdered form. If you get crystal, you get to crush it in a mortar and pestle, which loses its charm pretty quickly.
it’s 1 tsp per 2 cups of water. I’m going to email you a pamphlet on home fruit drying I got once upon a time, that covers this and other things.

I haven’t done a lot of dehydrating. Normally I’ve done it in the summer when I can get a lot of fruit really cheap. And it’s been more about storing the harvest. Question, does it make sense to do it now? Is it that much better or cheaper then what you can buy? Are your banana chips just that amazing?
