I haven't done a lot of dehydrating. Normally I've done it in the summer when I can get a lot of fruit really cheap. And it's been more about storing the harvest. Question, does it make sense to do it now? Is it that much better or cheaper then what you can buy? Are your banana chips just that amazing?

You have to go with lemon juice for the banana slices, not pineapple, and really soak them in it.

Better yet, go to the vitamin store, and get pure ascorbic acid (vitamin C), in either crystal, or preferably powdered form. If you get crystal, you get to crush it in a mortar and pestle, which loses its charm pretty quickly.

it's 1 tsp per 2 cups of water. I'm going to email you a pamphlet on home fruit drying I got once upon a time, that covers this and other things.
